Vitamin bomb vegetable soup

  • 3 spoons of Olive oil
  • 4 cloves of garlic
  • a bunch of parsley
  • 1 scallion
  • 4 big carrots
  • 1 broccoli
  • 1 big sweet potato
  • 2 zucchinis
  • half of cauliflower
  • 1 leek
  • 5 brussels sprouts
  • 4 table spoons of lens
  • 150g peas
  • a pinch of chive
  • a pinch of thyme


Wash and chop all the vegetables on small pieces. Add the spices. Pour the water over, so all the food is covered. Bring to boiling, then cook till soft. You can blend the vegetables in the end (especially if your kids do not want to eat them).




This soup is full of nutritive ingredients which your body needs every day. To get those “five-a-day” is not going to present a problem with this dish. You don’t have all the ingredients? Or do you have some other vegetables in your fridge? You don’t have to worry because this soup can be delicious with almost any vegetable. And, if you want it to contain even more nutrients, you can simply add a few fists of legumes.
